the best paleo muffins EVER


for the longest time i have tried recipe after recipe trying to avoid baking anything with almond flour that isn't DENSE. every recipe turned out so so dense. until i developed this secret! it's probably a thing... but i didn't know about it and YOU NEED TO KNOW.


so here is the secret...

okay so now i'll share the best recipe and how to put this little gem to work.


what you will need:


+ 1 cup of almond flour

+ 1 cup of dates

+ 1/8 cup of water

+ 1 teaspoon of vanilla extract

+ 1 teaspoon-1 tablespoon of cinnamon

+ 3 eggs

+ 2 tablespoons of coconut oil

+ 1 teaspoon of baking soda

+ 1/2 teaspoon of salt


  1. start by mixing the almond flour, cinnamon, baking soda and salt in a bowl.

  2. add the dates, eggs, vanilla, coconut oil, and water into a blender. the goal here is to blend the dates until they're a paste.

  3. blend until your eggs are fluffy! let them go for a few minutes!

  4. pour the date/egg mix into the dry ingredients and incorporate. you can easily add in whatever extras you like... chocolate chips, nuts, etc. we love the chocolate chips!

  5. bake for 20 minutes at 375 degrees.
